Pho rice noodles in vegan broth with fried tofu, enoki mushrooms, lady's finger, broccoli, cauliflower,
bok choy, and carrot. No mock meat. A healthy dish with lots of blanched vegetables that were naturally slightly sweet and thankfully not too hard or undercooked. Served with nutty savoury sesame seed puffed rice cracker on a bed of raw beansprouts - not sure why raw beansprouts were served, as they didn't taste pleasant and thereafter I also found out that it might not be safe to consume raw beansprouts haha.
