Sott'er Cielo de Roma: 2025 Italian wine dinner. 5th course, served with Col dei Venti Piemonte Brachett Girotondo 2021. This mousse was a perfect way to end the night. It was so thick and creamy. The pistachio crumble added some really great texture and elegant nutty flavor. I was really impressed with the wine pairing here. I'm usually not one for dessert wines, but this was so incredible. We bought a bottle, so it will have its own review. The rich chocolate mousse paired so well with the sweet wine. There's something so comforting and familiar about a big bowl of fettuccine alfredo! The alfredo was so creamy and the pasta was fun to eat. The vegan chicken is a new recipe that The Herbivorous Butcher has been working on. It's pea protein-based instead of their usual seitan. The breading on it in this dish was so delicious. it packed a lot of nice flavor as well, which the alfredo benefited from. This was packed with root vegetables and was served cold. I felt that the veggies were just a bit too raw for me. I would have liked to see them all roasted to become a bit more soft and mellow out the vegetal flavor a bit more. I thought the orange zest and vinaigrette were a great, fresh touch! What really made this one special was the giardiniera! I thought it was so delicious with the vegan meats and cheeses from the Herbivorous Butcher. The Linguiça made a comeback from the last wine dinner here which focused on Portuguese cuisine. The rosemary focaccia was a great vehicle for all of these great flavors. I love that it soaked up the giardiniera brine really well too. I was surprised by how well it went with the wine as well! To start off this Italian-themed prix fixe dinner, we were served Arancini made with risotto and Herbivorous Butcher mozzarella. It also had basil oil. I love arancini but it's such a special occasion to see it on a menu. I think the last time I had it was in 2023 at Ladybird in NYC. I thought the basil here really provided so much great flavor. I was a bit sad to hear they imported these desserts instead of making them in-house. The desserts at these wine dinners tend to be my favorite part. This was still really yummy. It's nice that they torched the top custard a bit like creme brulee. It was also served on a drizzle of caramel which I really loved the flavor of. I was expecting a flaky pastry with a creamy center, but this ended up being chewy throughout. Nice taste, but it just didn't feel as fresh as I was hoping. We of course had to pair the last course with a port. I'm not the biggest fan of ports or any dessert wine really, but the one they served was fine. This is a full, super meaty sandwich! They could have maybe split it in half for a more appropriate portion. I was happy taking mine home to have for lunch the next day though. This super hearty Portuguese sandwich was loved by the late Anthony Bourdain. It's made with The Herbivorous Butcher ribeye, mortadella (a cured meat), sausage, cheese, and a fried egg (Yo Egg) coated in a tomato beer sauce. This was kind of an overkill version of a grilled cheese with tomato soup. It's the ultimate winter food, I haven't really had anything like it. The meats were tasty with the bread and tomato sauce. It's not at all delicate and a bit difficult to eat. It's made with jackfruit tuna, potato, chickpeas, olives, red onion, and Wunder egg hard boiled egg. I've made a potato salad with Wunder Egg before and really enjoyed it. They did a great job with it here too. I really enjoy the texture and the taste that comes from the kala namak. It's too bad it was so warm out when this event took place at the end of October. The soup would be much more at home in our current weather. The fried outer crust was really nice. It was a good handheld starter. This might have been my favorite dish of the night! I loved having a little block of polenta as well. It's been a while since I cooked with polenta, so I'll have to experiment again after having such a tasty version here! MN Made: 2024 wine dinner with classic Minnesotan dishes, elevated and veganized at J Selby's. 6th course, served with Breaking Bread Marmalade This deconstructed dessert "salad" was a nice little way to be sent off. I've never been much of a fan of these types of dishes. I don't think my family made them often. It's not a uniquely Minnesotan dish. It's very common all over the Midwest, South, and I believe New England as well. It's made out of super sweet fruits such as pineapple, mandarin oranges, maraschino cherries, and coconut. It also contains marshmallow and whipped cream. This deconstructed version of the dish had house-made marshmallow fluff instead of marshmallows. The texture was spot-on! It was so sticky and gooey as it should be. The charred pineapple was really nice and I really liked the candied orange peel. I also really enjoyed the whipped cream topped with coconut. This dessert was paired with an orange wine. It was a much more pleasant orange wine than I've had in the past. Orange wine is made of white grapes that go through a red wine-like processing. It's like the opposite of rose. MN Made: 2024 wine dinner with classic Minnesotan dishes, elevated and veganized at J Selby's. 5th course, served with Dr. Pauly-Bergweller Spatlese Riesling Seeing carrot ice cream on the menu didn't really pique my appetite, but this ended up being a highlight of the night. The carrot flavor really wasn't too strong. I don't know if I'd say I really tasted it at all. The ice cream wasn't just plain vanilla though, so maybe there was a bit of earthiness to it. Carrots are sweet too, so maybe I was just tasting the sweetness from it. This ice cream was topped with caramel and granola. This was INCREDIBLE. The caramel was so sweet and delicious and I love a good crunch on my ice cream. It was such a perfect topping. This dessert is supposed to resemble brown sugar carrots that are often served during holidays. It's similar to brown sugar sweet potatoes. I really loved this interpretation. I like that it was garnished with a tiny sprig of carrot top too. This was paired with a riesling. I used to love riesling, but now they're just a bit too sweet for me. This was definitely sweet!
