Sott'er Cielo de Roma: 2025 Italian wine dinner. 3rd course, served with Tre Monti Romagna Albana Secco Vigna Rocca 2022.

This was a nice alternative to a traditional salad. This was packed with root vegetables and was served cold. I felt that the veggies were just a bit too raw for me. I would have liked to see them all roasted to become a bit more soft and mellow out the vegetal flavor a bit more. I thought the orange zest and vinaigrette were a great, fresh touch! It paired really well with a unique orange wine.
