I'm not big on ripe mango in savoury dishes (I'm not big on sweet mangoes in general) but this was surprisingly tasty.

Again, at first I thought - this ain't gonna be enough for one person but it Is!! I normally don't go for udon, but I really enjoyed this dish. The miso flavour is delicious and all the elements come together very well!
