Blueberry & Peanut Butter Butter Pancake at Josephine’s Coffee — lukasser's Review (May 10, 2025)

Josephine's is located in the corner of the hotel lobby of Corinthia hotel. Since they are part of them, they can use the outside area in their garden. It's absolutely magical they have tables set up inside the garden next to a cute little fountain. Such a lovely atmosphere for a chill brunch.
The food is really good and their menu is fully vegan filled with plant based deliciousness. The staff is really friendly and helpful. Since it is part of a hotel it's on the more pricey side, but the whole experience totally makes up for that.
What a lovely presentation, it looks so cool to cut blueberries in half. I would have never thought of that. The peanut butter pancake is served with blueberry compote, coconut yoghurt, maple syrup an some halved blueberries, garnished with coconut flakes. What a flavour profile, loved every single bite of it 🥰
