like all their dishes, so perfectly presented. these guys were so light and fresh. and
wow, the "fish" ceviche - texture is spot on, could be elevated with some sort of marinade cause these products tend to be bland. great dish, just needed some seasoning and maybe a better harmony/balance with the rest of the ingredients like the ponzu etc.
