Hummus & Roasted Squash Salad

Housemade hummus which was creamy but light on spices, roasted pumpkin squash slices which were delicious if a tad salty, and toasted rye bread. All on a generous bed of green salad mixed with cherry tomatoes, hemp seeds, pumpkin seeds, sunflower seeds, almond slivers, and agave mustard dressing. Healthy and refreshing salad! (14,500 won) Also added grilled tempeh for extra protein, which was pretty good and didn't have any bitter aftertaste. (+3,500 won / 2 pieces)

First of all the presentation of this salad was just lovely. The pumpkin was beautifully roasted and the hummus was damn tasty mixed through all that greenery, which was already mixed with another creamy dressing so no leaf had a chance of being left bare and raw. Just how I like it. To be honest the bread was ok but a bit out of place there- it really didn’t need it. Overall, a thoroughly enjoyable experience.
