Soy puff and karapincha (i.e. curry leaf) croquettes, a Sri Lankan-inspired dish slightly reminiscent of Middle Easten falafels. Housemade focaccia bread topped with a brush of peppery-tasting spiced achuete oil, Filipino-style 'tuna sisig' made using young jackfruit, and torched #sglocal #herbyvore Just Like Cheddar #vegancheese. 🥖🧀 Personally found the melted cheese slightly gritty in texture instead of being nicely smooth, perhaps because it was overheated and/or not like conventional vegan cheese? (HerbYvore 'cheese' consists of fava bean and pea protein, not coconut oil like most other brands.) Regardless, I really enjoyed the smoky aroma from this dish! Beautiful mocktail made bluish-green from the superfood spirulina~ 💚🩵💙 The base of the mocktail comprised a blend of jasmine tea kombucha, goji berries, liquorice, marigold, black cardamom, and magnesium. 🫖🏵️ There was a prominent tanginess from the kombucha, with complex and slightly spicy notes. 🍸 Garnished with 'lady fingers' ice plant, which had a crunchy texture and refreshing salty (???) taste; a unique touch which I've never really seen elsewhere! 🌿 NGL I don't drink and don't quite know how to appreciate cocktails / mocktails, but if you're into unique, healthy, and sustainability-focused concoctions, do swing by Analogue Initiative before they close down in a couple of weeks! I've visited several times and the bartenders are always happy to explain the concept behind every creation as well as tailor recommendations to individuals. 🧑‍🍳 P.S. So-so… frankly the taste of this #cocktail kinda missed me… perhaps im not at the level of tasting all these but it was a 5/10 🥱 It was a #seasonal #drink and glad it is not on the main menu… $26 for a drink it is a little… much…

Love the story of paying homage to the succulent and cacti family🌵Before getting into the flavors, the cactus is the symbol of resilience in the face of #globalboiling, #climatecrisis and #watershortage and this is a reminder of us needing to protect our planet 🌏 especially limiting to 1.5-2 oC temperature rise by the end of the 2000s But going into the drink itself 🍸 — the use of pink dragonfruit was really nice with the bright pop of pink and magenta 🩷 there might be some flavors that go over my head so please forgive me but the slight tang and sweetness coming from the lime and dragonfruit are represented in a lovely way through a great balance with a botanical tasting mezcal also, im a sucker for tajin anything!! the salt, chilli spicy and lime combined with all the other flavors 🍋🌶️🧂 i swear all the 5 flavors of the taste buds were activated in some way! it is $26 so buyer be warned!

Another rather expensive dish but this genuinely tasted amazing! the potatoes and #mushroom 🍄🥔 fried together to give this #light and #fluffy mushroom #croquette 🍟 the sauce that was drizzled had a deeper, smokier and tangier flavor almost like an elevated barbecue sauce! and then top it off with some sprigs of cilantro 🌿 but mind you that it is 5 pieces as an appetizer at ~$18 i believe? If it was served as fast food, this would have been gone in less than 1 minute 😂

I did enjoy #tacos — the taste, it was slightly sweet and savoury and tangy from the lime! 🌮🍋 also i do like the #hardshell taco against the softer jackfruit flesh #textures were great But think it can score a lot higher if not for the $26 price tag on 3 tacos… 🤑 Problem is the food, price and place… does NOT feel like a fine dining place — so paying that price also feels a little insane to me… If i’m paying $26 for 3 tacos, it had better leave me #mindblown 🤯

Fried mantou buns with a crisp exterior. Served with an Asian-style ragout mainly consisting of diced mushrooms (in lieu of minced meat), sweetcorn kernels, and Chinese celery. 🍞🍄🌽 I think there were also some bits of tomatoes and/or bell peppers too. Umami and deeply flavourful despite not containing alliums! My non-veg sister was initially skeptical of the name and description of this bar bite, but was pleasantly surprised. P.S. They changed their head chef and revamped their menu a few weeks ago, so the popular Eggplant Char Siew Mantou is no longer available. Soy protein 'chicken' nuggets by #sglocal #ALTN, with crunchy batter encasing the juicy, tender, and 'meaty' interior. Most impressive vegan nuggets I've tried in terms of texture and taste! (Though it should be noted that the seasoning includes MSG heh.) Given that the nuggets were basically pre-made frozen food, what made this dish outstanding was the in-house curry crack sauce, which was sweet and smoky~ 🍗🌶️ On par with or even superior to McDonald's classic pairing - addictively good and cruelty-free! Passionfruit, coconut milk, coconut water kefir, and chamomile mocktail infused with anti-inflammatory superfoods such as ashwagandha winter cherry and curcumin. 🌴🥥🍒 There was a prominent tangy and fruity aroma, highly reminiscent of starfruit juice or sour plum juice. 🍹 The bartender explained that the garnish was made using the by-products of the mocktail, i.e. the milk solids from clarifying the coconut milk, coconut water kefir, and passionfruit leaves. This creamy filling was piped into a soy protein eggless meringue tart shell, and sprinkled with moringa powder. (Strangely it looked like an abalone to me hahaha.) Impressive effort to close the loop and reduce food waste! 🌎♻️ Overall Instagrammable, and with a good health and sustainability focus in mind, though taste-wise it probably isn't something I would order again. The bartender explained that the idea behind this cocktail was to feature foods that astronauts purportedly eat in outer space. 👩‍🚀🚀 Apart from gin, Campari, and Cocchi, this cocktail mainly consisted of clarified peanut butter and kyoho grapes (as a reference to peanuts and freeze-dried fruits), giving a concentrated scent of PB&J without the oil. 🥜🍇 The garnish on top was inspired by freeze-dried Neapolitan ice cream sandwiches (though some have debunked the myth that astronauts really consume them) - soy protein eggless meringue flavoured with tonka bean, strawberry powder, and coconut nectar, topped with a dollop of housemade carob gel (in lieu of cacao). 🍨🍫 I also found it interesting that they went all-out with the concept of the drink, serving it in a Lunite ceramic cup locally handmade by Art Occasians, with a textured surface reminiscent of the pitted craters on the moon~ 🌕🌑 Quite pricey but props for the creativity! 🍸 P.S. Roasted cauliflower head which was charred and smokey on the outside, yet remained juicy and tender on the inside! Pretty impressive to me, since I've ever eaten a comparatively tough and dry roasted cauliflower elsewhere. Served on a bed of sweet pepper puree, gremolata (Italian condiment - green sauce made of parsley, toasted pine nuts, garlic, sea salt, lemon zest, and basil oil), alongside nicely seasoned crunchy fried chickpeas. 🫑🍋 Great combination of textures and flavours, albeit a tad pricey.
