Pretty impressive to me, since I've ever eaten a comparatively tough and dry roasted cauliflower elsewhere. If you have an air-fryer at home, stuff one in for 30 minutes with a coating of spices. You’ll thank you 😙 I’ll thank my intuition for getting this too. Every element of this was delicious. The cauliflower was roasted to perfection, the crispy chickpeas added a nice texture contrast and extra smokiness, and the sweetness of the red pepper purée complemented the freshness of the germolata so nicely. Could have this all to myself!
I like the charred exterior and sweet pepper puree. But I've tried better roasted cauliflower elsewhere. This was pretty average
This dish consists of roasted cauliflower on a sweet pepper purée. Topped with gremolata and fried chickpeas on the side. Cauliflower was nicely charred. Chickpeas were crispy. All the ingredients came together very nicely.
