Passionfruit, coconut milk, coconut water kefir, and chamomile mocktail infused with anti-inflammatory superfoods such as ashwagandha winter cherry and curcumin. 🌴🥥🍒 There was a prominent tangy and fruity aroma, highly reminiscent of starfruit juice or sour plum juice. 🍹 The bartender explained that the garnish was made using the by-products of the mocktail, i.e. the milk solids from clarifying the coconut milk, coconut water kefir, and passionfruit leaves. This creamy filling was piped into a soy protein eggless meringue tart shell, and sprinkled with moringa powder. (Strangely it looked like an abalone to me hahaha.) Impressive effort to close the loop and reduce food waste! 🌎♻️ Overall Instagrammable, and with a good health and sustainability focus in mind, though taste-wise it probably isn't something I would order again.
