Banh Mi Up’s Vegan Roasted Pork Belly is superb. It is perfectly crisp and tender all at once. I always order the Vegan Roasted Pork Belly Vermicelli dish, but I decided to switch it up and order the Banh Mi. The sandwich is made with a Vietnamese baguette, and consists of vegan roasted pork belly (bean curd, coconut milk, tapioca starch, baguette), cucumber, pickled carrots & daikon, jalapeños, and cilantro. They serve a delicious cashew sauce on the side, along with a generous vegan Vietnamese coleslaw. I loved the cole slaw and pickled veg! Was a little dry without the sauce—lots of extra bread! The “pork belly” just tasted like fried bread so I would want to try it w tofu next time
