This textured soy has just the right size to make pasta sauce and is organic. With this I made a great ragù bolognese sauce for Easter Day lasagna. My family always wants my lasagna!
I prepare it with a sauté of carrots, onions and celery, then add the soy so that it absorbs all the flavors and let it cook a couple of minutes. I deglaze with red wine and add the tomato sauce. Then I add more chopped carrots, onions and celery, finely chopped rosemary, bay leaves, garlic cloves and a sprinkling of thyme. I let it cook thirty to forty minutes and it is ready.
