My mom @manjugarg and my better half @mrsgarg will tell you that if I had to pick my last meal on earth it would probably be channa masala with bhatura (a very fluffy doughy fried Indian bread). My mom taught me how to make this dish when I first moved into my own place and it never gets old. I could eat this everyday.

But, it has to be right. There are dozens of variations of channa masala in India 🇮🇳 depending on where you go. Sometimes it’s very saucy or even soupy, sometimes it’s very dry and it can vary from sweet and tomatoey to very spicy.

My favorite version is Punjabi style from Northern India. The gravy is on the dryer side and it’s filled with spices that can knock you back. And served with hot green chilies and onions and a nice squeeze of fresh lime.

I couldn’t believe my eyes when I saw this on the menu at Dempsey Project today!! It was absolutely amazing, just like everything else I had. They have an unbelievably good vegan menu 🥑

vikas The easiest way is to get a box of channa masala spice mix online or at your local grocery store that sells ethnic or Indian foods. Then just follow the instructions on the recipe. And whether you use dry chickpeas or canned, you will need to simmer for at least 1-2 hours depending on how tender you want the chickpeas. Or you can use a pressure cooker. 4 likesReply
