Tofu Pesto Scramble

The Sweet Hereafter

This consisted of savory scrambled tofu, oyster and cremini mushrooms, asparagus, yellow and zucchini squash, cilantro, microgreens, deeply flavorful pesto, and hearty Cajan home fries. It was delicious, hearty, and gluten-free.
