These oven ready lasagna noodles were so cheap at Aldi! They were under $1 I believe. I like how narrow these lasagna noodles are. The ones I've bought in the past are probably twice as wide. This makes it a lot easier to fit in whatever pan you have. I made some lentil Bolognese and tofu ricotta to layer this lasagna with. I added some zucchini between the layers too and topped it with Violife mozzarella! The lasagna noodles fully cooked in the oven in an hour. It's so nice not having to boil these unwieldy noodles! I'll definitely keep these lasagna noodles on hand!
