READY TO EAT LUPINS
Lupins are a potentially cheap and completely undervalued source of #plantprotein. A couple of years ago, on a vegan food fair in the Netherlands, I met a family who did their best to grow and market #lupin seeds and lupin products in a trendy way. I do not know if they’ve succeeded. Lupins have the potential to be the Western #soy .
Taste/bite: Nice bite, like a soft nut. Slightly salty taste due to the pickling. This could go perfect as an appetizer with for instance cherry tomatoes.
Ingredients: Organic and simple. Lupins with (a lot) of salt in water and some citric acid to increase acidity and shelf life.
Shape/Conditioning: A 280 g disposable glass jar which you can of course reuse. Leaked out net weight is 200 g.
Price: I paid 3,05 € (January 2023), for a total (leaked out) weight of 200 g. Thus, an item one had better bought dry and raw becomes more expensive and you have the packaging waste. For comparison: you can easily find 1 kg of dry, organic chick peas for about the same price.
FYI: I made a vegan cheese with these lupins following Canadian Marie Lafôret’s easy recipe on pg 135 of her great book “Vegan”, a true classic amongst vegan cook books.(See last picture)
