I really enjoyed this sandwich. This place has become a must-go upon arriving in Madison for me and @[iszy](user-5e1df279f2316f0020a86b30)!

The house-made seitan was pretty close to what I remember steak tasting like, though my memory of it is fading after almost 2 years of being vegan.

The sauteed mushrooms and onions, owl sauce, arugula, and cashew cheez sauce did a good job of rounding the sandwich out. I could imagine this being really delicious with an au-jus-style dip.

Oh you're so right, it'd be great with au jus!
