#chocolate #ganache with #coconutmilk, layered with toasted #coconut and #cashew, and #rasperry #sorbet. This was really tasty and looked great!! I shared this with a friend because I was already so full from the #sushi and this place, but we really wanted to try a #dessert! This was also the first time I've had a dessert here because again usually the sushi is more than enough. I love how clearly labeled the menu is and how unique and though-through the menu items are. I'm so happy that #bluesushi has locations all over the place:) I used to go here a bunch in #Chicago it's great that I can continue supporting them in #Denver!

Love this #sushiroll and I get it nearly every time I come here! I appreciate that Blue Sushi Sake Grill has a huge vegan selection and it's not just basic veggie rolls, they really put in some effort to make tasty, beautiful, and unique rolls. This prince roll is 8 pieces and contains #eggplant #tempura, #avocado, and #sweetsoysauce. It's more simple than some of their other rolls, but the flavors work well together and I love the creaminess of the avocado next to the tempura. I'm so glad there's a Blue Sushi here in Denver (and they're a chain so there are more locations in other states), because I used to love going here when I lived in Chicago!!

Yum!! This is a great #sushiroll that I've gotten several times now! I LOVE that Blue Sushi has such an extensive list of #vegansushi and that they are #unique, you can really tell they put a lot of thought into their menu. This roll comes with 8 pieces and contains #plantbased #tuna, spicy #aioli, #cucumber, #avocado, #crispyquinoa, black tobiko caviart, and #scallion. The flavors work really well together! Tbh I don't think the vegan tuna really tastes like tuna, so I'd be fine with that ingredient being replaces by something else, but again I appreciate the unique and extensive options!!

This was a beautiful and delicious roll! It had plant based tuna, vegan spicy aioli, cucumber, avocado, crispy quinoa, black tobiko caviart, scallion. The tuna tasted so real it was amazing and the “caviar” was made from seaweed. So cool!! It was a great combination of flavors and really tasted like a raw sushi roll. I really loved the soft tofu texture on the inside, and the crunch of the peanuts on the outside. I’ve never thought to put peanut sauce on a sushi roll! So good. The avocado was also fresh and the cilantro topping gave it a fresh flavor. The whole thing was giving me Pad Thai vibes. Would definitely get it again. #sushi #vegansushi #sushilover

A tempura fried pickle??!! This was such a wild sushi roll but somehow ended up being one of my favorites. If it had a little bit of vegan ground beef it would almost be like a burger! It has a tempura pickle, fried onions, and bbq “skin” on the outside (seemed like tofu skin marinated in bbq flavors). Very interesting flavor combinations for a sushi roll and far from traditional sushi but I loved it. #sushilover #sushi #vegansushi

Flavor was on point! But there was basically no tofu or seaweed in there. It was mostly broth and scallions with 2 little slices of mushroom. It was still a nice appetizer and a decently large bowl. Came here mostly to try their vegan sushi rolls but couldn’t resist trying their vegan miso soup! #misosoup #miso #soup

The regular miso soup is not vegan, but can be easily made vegan by requesting the vegan broth. The broth is quite salty, but the soup is tasty and has a nice amount of mushrooms and tofu.

We tried the Up In Smoke, Shiitake To Me, and Thai Hippie rolls and all were amazing! I loved the vegan smoked salmon and vegan shrimp tempura in the Up In Smoke roll, and my husband, who doesn’t even like mushrooms, loved the Shiitake to me roll (I did too). The Thai Hippie was sweet and delicious. They have an entire section of 18 fully vegan maki rolls on their menu. We can’t wait to go back and try more!

This is a different roll than the Unami Maki. "Pineapple, red pepper, thai basil, bbq eggplant 'eel', masago cavi-art, scallion, sweet soy sauce". Comes with 8 pieces. Perfect combo of sweet and savory with a refreshing burst of pineapple. Seaweed 'caviar' is also just a cool concept.
