This was the 8th and last dish of the tasting menu. Out of all the dishes this one stood out because it was way more autumnal than the others, a richer earthy flavor that seemed a little unusual during our visit in the spring. It was delicious nonetheless. A goulash made from mushrooms accompanied with buckwheat polenta. Went great with a glass of red wine. The price of the tasting menu is 25€ per person and all dishes are shared with the table (in this case we shared this in 3). #brescia #veganfriendly #goulash #polenta #vegangoulash #tastingmenu

Carrots cooked at low temperature with cannellini beans hummus, spring onion salsa verde and fermented radish. Very good dish even though it was only one carrot per person (the tasting menu is all for sharing). Another great dish from this 8-course tasting menu. It was spring vegetables with lentil tempeh, cashew and green oil fondue and mixed sprouts. The lentil tempeh was very good and worked well with the other ingredients. The tasting menu was 25€ per person and each dish is shared with the table (our table was of 3). This was a marinated soft tofu, served with spicy gochugaru mayo and cabbage and ginger kimchi. The tofu looked more firm than soft to be honest, but I have to say it was a tasty dish. The spiciness was no too strong. It was one of the 8 courses to share of this tasting menu. Keep in mind that this was a portion shared by 3. This the third dish to share part of this 8-course fully vegan tasting menu. It was a umeboshi and mustard flavored beetroot, with arugula and peanut pesto, accompanied by a red beet mayo. It was such a well thought dish with an original and pleasant taste. I really appreciated the creativity behind all these vegan dishes. This was the first thing we were served for a tasting menu. Taggiasche olives (delicious) and fried fava beans. I’m usually not a fan of fava beans but I have to say I liked them very much in this fried version. This was just a small nibble before the bigger plates came, but still a nice and original idea. This restaurant is very vegan friendly with most of the dishes being vegan. This whole tasting menu was vegan for example. Favoloso questo seitan 🤩, devo dire che è uno dei più deliziosi che abbia assaggiato: tenerissimo, con un sapore deciso e consistenza da manuale 💯 Viene preparato con vino rosso della Valcamonica, servito con catalogna ripassata con salsa teriyaki e crema di topinambur.
