The vegan enchilada casserole tasted really great (better than the ones I try to make).

It was a good helping of tomato sauce, beans, corn, and vegan cheese. Once again, the cheese doesn’t really melt. Your mileage may vary as far as the cooking instructions go. I had to cook it in the microwave for a few minutes longer in order for the meal to fully defrost and cook. #veganisnotscary 30/90

Authentic tasting enchilada meal, could be more cheesy. I added my own cashew cheese with

chives and yogurt with salsa. Easy to prepare, three minutes in the microwave. $5.99 for 2 1/2 servings, pretty good price point.
