Vegan Enchilada Casserole

I have a hard time finding vegan things at Trader Joe’s (anybody else hate their font? 🙄 lol) but this caught my attention. It was like $6 but felt really heavy so I gave it a shot. It was filling! Pretty good for a frozen meal. I scooped it into a bowl and topped it with some cilantro. Adding some guac or sour cream would make this even better. #enchiladas #veganenchiladas #traderjoes

This casserole is easy storage and quick prep time. The frozen meal can easily be removed from the plastic to heat in the oven. #veganenchiladas

My husband wanted to try this though, to be honest, I am not big on #enchiladas usually but this was horrible. The texture was disgusting (we baked in the oven as instructed) and visually it looked so bad. Flavor was not good either, just all around horrible :( Props for making a #fullyvegan offering but throw this one away and do something else. #mexicanfood #traderjoes #frozenmeal

this nailed the #enchilada flavor, which is hard to do but seemed a little #toohealthy for me. maybe an overabundance of zucchini for enchiladas. i had forgotten to bring food for a day in san diego and this seemed a better alternative than overpriced take-out. it definitely filled me up. #fastfood

This was a good choice for a cook and easy meal on a busy night. It was a very large portion and would feed several people. It took about 35 minutes to heat up instead of the suggested 15. It was filled with beans, vegan cheese, and veggies. The flavor was nice, not too spicy. I added some guacamole and salsa as well. #veganiseasy
