The vegetarian cornbread is apparently vegan. My daughter really wanted to make my muffins with
my chili and they were pretty good! Still like making homemade ones better but it was nice for the convenience 😊

I love this stuff and it’s so cheap and easy to make. I use aquafaba
in place of egg and use oat milk.
I should’ve used 2 boxes though for the chili.
Made vegan chili casserole for my carnivore friend with Beyond Beef. She was impressed at how good it was. She’d also never had the cornbread cooked on top of the chili before but my Mom would make it like that. Wish I would’ve remembered to take a photo though before we devoured it. But it was really good! 😋

I love the traditional taste of Jiffy cornbread. Nothing beats a nice and sweet cornbread
with bean soup. Obviously, I had to avoid Jiffy for years because of its icky ingredients. I was beyond delighted when I spotted this on ths shelf. I think I actually audibly gasped in the middle of the grocery store aisle. I grew up on boxed mixes, so for me it was a taste of home! 😋

Original Jiffy contains lard, but this "vegetarian" version has no lard, milk, eggs, or honey.
With that being said... it's alright. There is just so much sodium in this stuff. I prefer to make my own.
