Love these noodles! They’re great for making pho. They cook quickly and I love the

Their company sells organic Japanese noodles (soba, udon, ramen & more) from Australia. The one

i purchased in particular is called “cha soba”, aka green tea soba. I have concocted several meals out of it dry and unseasoned. The soba itself tastes good, the flavour is not too strong and the texture is smooth and soft when boiled right. One of my go-to carb alternative when i get tired of rice.

Can be purchased from any Cold Storage or Marketplace outlets.

These soba noodles have a great texture and are perfect cold with veggies, sesame seeds

and a sesame tamarind ginger dressing. This has been one of my favorite dishes to make this summer and it's funny that it's one of the most stereotypically vegan: avocado, kale, and buckwheat noodles. I'd like to try using them in a soup this winter.
