Passionfruit, coconut milk, coconut water kefir, and chamomile mocktail infused with anti-inflammatory superfoods such as ashwagandha winter cherry and curcumin. 🌴🥥🍒 There was a prominent tangy and fruity aroma, highly reminiscent of starfruit juice or sour plum juice. 🍹 The bartender explained that the garnish was made using the by-products of the mocktail, i.e. the milk solids from clarifying the coconut milk, coconut water kefir, and passionfruit leaves. This creamy filling was piped into a soy protein eggless meringue tart shell, and sprinkled with moringa powder. (Strangely it looked like an abalone to me hahaha.) Impressive effort to close the loop and reduce food waste! 🌎♻️ Overall Instagrammable, and with a good health and sustainability focus in mind, though taste-wise it probably isn't something I would order again. P.S. The coaster was also locally made by The Plastic Project / Plastify using recycled plastic~ ($17 non-alcoholic, $26 alcoholic) #sgvegan #sgdrinks #cocktail #mocktail #minorityowned




Non-alcoholic drinks don’t get the love they deserve. For one, it takes a lot more effort to craft a cocktail without alcohol but still with the same flavour heft as one with a spirit to anchor it. Analogue does this exceedingly well and should rightfully be celebrated. This drink — the Passionfruit — is a stunning example of how a non-alcoholic cocktail can have the same complex profile as any other. When you’re as jaded with the F&B scene as I am, and nothing really excites you anymore, you will recognise real craft when you taste it. I found it in this drink. Well done Analogue.
