Vegan Croissants

This croissant really hits the spot with a coffee after a surf on a cold day. Has a delicious sweet glaze on top covered with flaked almonds. Amazingly soft and fluffy on the inside with slightly chewy bits on the outside. Amazing

Probably the most difficult thing to bake vegan - but this one is delicious!!!! Don't expect a traditional style of croissant as vegan dough reacts differently, BUT it has a soft but satisfying sweet crunch, a sweet almond flavoured glaze and lots of almonds ontop. The only thing I would do differently is toast the nuts before they get sprinkled on the croissant as it adds taste and texture. Highly recommended
