OOH. I'm a sucker for a bowl of savoury tomato noodle soup and this one

more than hits the spot! I actually prefer it to the normal pho, which strikes me as a bit too sweet (when I had it, at least). This one is beautifully umami, brightened with a tangy punch of tomato on the tongue. Paired with qq tofu and what I think is supposed to be faux crabmeat paste, but none of it really tastes very seafoody. The tomato soup is the star here!

Basically Bún Riêu Chay! Tomato soup filled with whole grain vermicelli noodles, 'crabmeat' chunks made

using beancurd and glass noodles, tofu 'egg', 'fishcake' tofu, and shimeji mushrooms. 🍜🦀🍳🍄 Nice balance of mildly spicy, sweet, and appetisingly tangy flavours with the inclusion of pineapple, lime, and aromatic herbs~ 🍍🌿 Of note, the housemade 'crab tofu' was innovative and tender in texture but tasted quite bland; perhaps a dash of seaweed in the 'crab tofu' would have enhanced the 'seafood' aroma?
