Basically Bún Riêu Chay! Tomato soup filled with whole grain vermicelli noodles, 'crabmeat' chunks made using beancurd and glass noodles, tofu 'egg', 'fishcake' tofu, and shimeji mushrooms. 🍜🦀🍳🍄 Nice balance of mildly spicy, sweet, and appetisingly tangy flavours with the inclusion of pineapple, lime, and aromatic herbs~ 🍍🌿 Of note, the housemade 'crab tofu' was innovative and tender in texture but tasted quite bland; perhaps a dash of seaweed in the 'crab tofu' would have enhanced the 'seafood' aroma?
