Sweet & Sour Brinjal

I really like all kinds of eggplant in sauce. This dish wasn't as spicy as the others as it is a sweet and sour version. A bit too greasy again. But it goes very well with white rice!

Was concerned that this might be too sweet but thankfully that was not the case and it was very tasty. I love eggplant dishes and enjoyed this a lot with my plain rice. As everyone had commented it was indeed quite oily and could have done with less oil 😅but I guess that's OG Chinese cooking for you! #sichuan #eggplant #brinjal #oily

Oily (as expected of mainland Chinese cuisine) but this was nevertheless super flavourful and well-cooked!
