Sautéed Eggplant

i thought i would try something different today. it was delicious. the eggplant was perfectly cooked. i licked the plate. i could eat here every day. #encinitas

Plumeria is open for takeout orders these days. I’m glad I chose this eggplant dish for my first order here. It’s a huge bowl of food. I have a hearty appetite, but I had a hard time finishing this meal in one sitting. I ordered medium spicy, which was perfect. Anything above that level would’ve been too much. 🍆 🌱
