Mexican Tofu Taco

These are INCREDIBLE. The guacamole is the surprise star, but the tofu scramble is fluffy and makes for a good base to showcase the salsa and the rest of the flavours. The crispy black taco is lovely, too.

These tacos are flat instead of folded, which makes for an interesting presentation. They're filled with Mexican spiced beans, taco seasoned tofu scramble, salsa and guacamole, served on crispy purple corn tortilla shells. Really tasty!
