Baingan Bharta

My favourite of all Indian curries! Always a winner in my opinion, with the rich, toasted, earthy flavour of the eggplant and lots of yummy herbs and spices. Perfect texture and perfect to dollop on a piece of vegan naan!

The god of all Indian dishes… #bainganbhartha. This is one of my favourite dishes of all time, and I think Masala Dosa really does it justice. It’s just so flavourful, the perfect texture and richness. I just wish it was a bit bigger, for 5.30$ this wasn’t a huge amount. #eggplantlover
