Right.. why as a #lazyvegan have I not come around to making a #rawlasagna yet?

Stacked upon layers of #zucchini sheets, it’s really the “sauce” that makes such a dish. The layers compose of some of the crispiest dehydrated cherry tomatoes ever 🍅, spinach 🥬, shiitake #mushrooms 🍄 & a #mince of walnuts and come slathered in #pesto and #cashewcheese cream all over 😋 I’ve heard mixed reviews of this #lasagna, mostly complaints over it being cold.. 🥶 but really if you take it for a #salad or if you open your mind to the true lazy vegan cuisine of food straight out the fridge 😙 Yeah, this is some awesome stuff! So much to replicate from this place 😋 I had truly an inspirational #birthday dinner!

If I had to pick, I’d say this dish would be the best representation of

@afterglow’s unique cuisine 🤗 It’s not everyday you come across not only a raw but #crispy #lasagne 🤯

It seems almost every dish comes with a side of greens but I’m not complaining for the refreshing quality it provides 😙 What you see are crisp layered #zuchinni sheets. That’s right! 😜 In between them, comes a most crunchworthy experience of #spinach, minced #walnuts, #shitakemushrooms, and dehydrated #cherrytomatoes 🤤 It’s just a sea of sweets and savouries with the natural conclusion of mouth-watering #cashewcream 😋 And i do love me a good crunch 💥

I’ve paid more than $24 for far inferior lasagnes so I’d easily give this a 10/10 😝

Who ever said #veganfood couldn’t be great? #veganisnotscary 😜 though trying to split this tower to share was just a little bit 🫣

Step 1 going to into trying this dish, remember it’s not a lasagna in the

sense. Step 2: enjoy the experience with of vgetables stacked and lovely sayce complimenting it. This cold lasagna was kind of cooling considering we were eating outside! #abillionlove #muchhealth

i loved this! it was super tasty - didn’t taste healthy or raw. i would

definitely go back again for this. i just wish there was more because i wasn’t full even paired with a side and dessert. #takesalottofeedme #veganisnotscary

This lasagne is made with zucchini sheets, cashew nut cream cheese, pine nuts, mixed herbs

pesto, dehydrated tomatoes, baby spinach, shiitake mushroom, walnut, and garden salad. The dressing for the salad has honey in it, so you can ask them to change it to vegan. A really flavourful and filling lasagne!

$22! lighting was so bad at the back of the place HAHA pardon the bad

photo!! but anyway I guess this was not bad? didn’t really feel like a lasagne though. just layers of zucchini with tomato sauce and I think some walnut meat pieces in between, tasted like bolognese. not sure what the orange and white sauces were supposed to be tbh. there was a crunchy layer of sun dried tomatoes that were really good!! side salad was average and quite meh, probably could’ve done better with more vinaigrette because it was just like eating grass HAHA overall felt this was too pricey and the portion is terribly small for $22.. not bad but wouldn’t get again

Raw Crispy Lasagne (zucchini, cherry tomatoes, spinach, shiitake, minced walnuts, cashew cheese, pesto) - this

was delicious and healthy and one of my favourite mains choices at Afterglow

Interesting concept. I see this more like a salad than a main dish; certainly not

heavy like a typical lasagne. I neither love nor dislike it. The vegan cheesy dressing was rich but I personally prefer it more savory and less sweet. Compared to Afterglow's burger mains, this was far less filling.

Where do I even begin with this glorious conception!! Afterglow’s raw lasagne is quite flawless

— there’s so much flavour packed into this, yet still so refreshing (also because it’s served cold) and delightfully light on the palette. Anything zucchini can get a little soggy and I will say the zucchini sheets do let out some water as you slice through, but nothing I’d complain about! This is also marked as a healthier choice option on the menu, which is always a bonus~

At $22, I think the raw lasagne is a *little* pricey, but it’s certainly one of the more unique things on the menu and I haven’t quite seen anything similar elsewhere. I’ll be back!! 🌝

(PS: Afterglow is also one of my favourite places to bring my friends when they want to try vegan food. It’s a very cosy space!)
