What are Tofu Sheets?

Ingredients
- 1 pack Baiye tofu sheets (@mrsgarg recommends Pulmuone brand)
- 1/2 carrot, julienned
- 1/2 capsicum
- 1/2 cup dried wood ear mushrooms, rehydrated and sliced
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated or minced
For the Stir-Fry Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon black vinegar or rice vinegar
- 1-2 tablespoons sesame oil
- 1 teaspoon chili paste (adjust to your spice preference)
Equipment
- Large pan or wok
- Small bowl for sauce
- Pot for blanching noodles

Instructions
- Rehydrate the wood ear mushrooms according to package directions, then slice them into bite sizes. Prepare your carrots and capsicum. Mince the garlic and ginger.
- In a small bowl, whisk together the soy sauce, black vinegar, sesame oil, and chili paste to create your stir-fry sauce. Set aside.
- Bring a pot of water to a boil. Add the tofu noodles and blanch for 1-2 minutes, or as per package instructions. Drain thoroughly and set aside.
- Heat a large pan or wok over medium-high heat. Add the sesame oil and sauté the minced garlic and ginger for about 30 seconds until fragrant.
- Add the sliced carrots, capsicum, and rehydrated wood ear mushrooms to the pan. Stir-fry for 3-5 minutes, until the vegetables are slightly softened.
- Add the blanched tofu noodles to the pan with the vegetables.
- Pour the prepared stir-fry sauce over the noodles and vegetables. Toss everything well to ensure the noodles and vegetables are evenly coated with the sauce.
- Cook for another 1-2 minutes, allowing the sauce to heat through and meld with the ingredients.
