What are Tofu Sheets?

Tofu sheets (also known as Baiye tofu) are a fantastic, low-carb, and high-protein alternative to traditional flour noodles or rice noodles. Made primarily from tofu, they offer a sturdy base that absorbs the flavors of your sauces and vegetables. They come pre-cooked and often require only a quick blanching, making them incredibly convenient for fast meals like this stir-fry.

Ingredients

  • 1 pack Baiye tofu sheets (@mrsgarg recommends Pulmuone brand)
  • 1/2 carrot, julienned
  • 1/2 capsicum
  • 1/2 cup dried wood ear mushrooms, rehydrated and sliced
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated or minced

For the Stir-Fry Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon black vinegar or rice vinegar
  • 1-2 tablespoons sesame oil
  • 1 teaspoon chili paste (adjust to your spice preference)

Equipment

  • Large pan or wok
  • Small bowl for sauce
  • Pot for blanching noodles

Instructions

  1. Rehydrate the wood ear mushrooms according to package directions, then slice them into bite sizes. Prepare your carrots and capsicum. Mince the garlic and ginger.
  2. In a small bowl, whisk together the soy sauce, black vinegar, sesame oil, and chili paste to create your stir-fry sauce. Set aside.
  3. Bring a pot of water to a boil. Add the tofu noodles and blanch for 1-2 minutes, or as per package instructions. Drain thoroughly and set aside.
  4. Heat a large pan or wok over medium-high heat. Add the sesame oil and sauté the minced garlic and ginger for about 30 seconds until fragrant.
  5. Add the sliced carrots, capsicum, and rehydrated wood ear mushrooms to the pan. Stir-fry for 3-5 minutes, until the vegetables are slightly softened.
  6. Add the blanched tofu noodles to the pan with the vegetables.
  7. Pour the prepared stir-fry sauce over the noodles and vegetables. Toss everything well to ensure the noodles and vegetables are evenly coated with the sauce.
  8. Cook for another 1-2 minutes, allowing the sauce to heat through and meld with the ingredients.
  9. Serve immediately and enjoy your quick, healthy, and satisfying vegan meal!
