My favorite chimi ever is still probably the black bean chimichanga from Tijuana Flats in Florida, but this is my second favorite! 🥈It has Asada Seitan, refried pinto beans, melted quesillo, Mexican rice, garlic cashew crema, guacamole, grilled peppers and onions. I wish the asada meat was made from soy or something other than seitan because I'm really sensitive to it and could only have a couple bites. It tasted great though and my husband was very happy to finish it.
