After months of not seeing Mercadona's #sojatexturizada on the shelves, last week a version by Luengo made its debut at the Corralejo, Fuerteventura store! Texturized soy is a super protein food with 50g of protein per 100g, and also is a great source of fiber while being low in sugars and fats. Just look at the Yuka score below! 😁
I love how on the packaging it explicitly says it is a meat substitute and has a recipe to try - the only thing missing is the vegan symbol. I use it in my vegan chili mac and other recipies where its texture and sponginess add to the meal experience.
