Visually stunning starter plated on banana leaf - just look at that vibrant splash of chili powder on belinjo crackers! A tad reminiscent of baba ganoush, but make it Southeast Asian, is the dip: textured mush of aubergine with fresh coriander (would have loved more #evilweed) and zesty squeezy lime. You can imagine how good it tasted. Thanks to @vikas and fellow @abillion members for such a splendid time out last Thursday... wait, that's literally #throwbackthursday. 😏
