I love the clean ingredients in the milk alternative. The taste is good as well and it is quite creamy. It works well in my coffee ☕️ . I find it a bit pricier than than the other almond milks in the market.
I used it to soak the tortillas that I used in this blueberry 🫐 blintz recipe. So delicious
🌱EASY BLUEBERRY BLINTZES🌱
FOR THE TORTILLAS
3 low carb tortillas
1 cup almond milk
Add the tortillas to a bowl and pour the milk over the tortillas. Let soak for about 10 minutes
BLUEBERRY TOPPING
1 cup blueberries
2 tablespoons agave
1 tablespoon lemon juice
1 tablespoon water
1/2 teaspoon cornstarch
In a small pan add the cornstarch into the water and stir until dissolved
Add the other ingredients and Simmer for about 5 minutes.
CREAM CHEESE FILLING:
5 oz cream cheese
2 tablespoons Greek yogurt
1 tablespoon agave
1/2 teaspoon vanilla extract
1/2 tablespoon lemon zest
Add all to a bowl and stir together until well combined and smooth
ADDITIONAL INGREDIENTS:
1 tablespoon butter
Powdered sugar
Fresh mint
To assemble;
Place each tortilla on a flat surface, add about 2 tablespoons of the cream cheese mixture to one end . Fold up the top, fold in the sides and roll,
Heat a small amount of butter on a medium pan. Add the blintzes and cook for a few minutes until golden brown. Remove from the pan , top with the blueberry sauce, powdered sugar, fresh mint and lemon zest ,
