These marinated grilled artichokes from Trader Joe's are one of our favorites. They have a nice balance of flavor, and the vinaigrette enhances rather than overshadows the artichoke's flavor.
We like to toss them into salads, pastas, and sandwiches like this colorful focaccia sandwich. Alongside the artichokes, I also added roasted red peppers, peppery arugula, capers, pickled red onions, and dairy-free herbed goat cheese.
