A meat alternative made of fungi protein (and soy) is pretty cool—seeing how science can create unique foods is fascinating! The protein comes from a microbe originating from Yellowstone (support national parks!) and fermentation turned it into a “complete protein source with all 20 amino acids” 🤯

These get a crispy exterior and juicy insides when sautéed. The flavor profile is interesting—perhaps sort of fruity? And the texture is 👌🏼
