This was included in a variety pack that I had purchased, and of all the flavors, this gluten-free one is the least that I was looking forward to trying. Given that I really wasn’t excited about the other two flavors, this one had been sitting in my shelf for a while, and I finally decided that it’s time to finally use it up to make room for something else. Just as I expected, nothing exciting about the taste. On top of that, it’s dense and crumbly, not light and fluffy like advertised on Shark Tank. I admit though, I don’t follow their recipe, since it includes dairy milk, eggs and butter. Instead, I use Miyako‘s butter, flaxseed, and plant milk.  I felt deceived, because on Shark Tank, the creators were boasting that this product is vegan, so I was disappointed that not only is the recipe on their package not vegan, but they don’t even give any recommendation for vegan alternatives. I feel that if they’re going to boast that it’s vegan, they should have tested out different vegan alternatives to make this pancake mix, so that they could determine which would result in the best flavor and texture. 

To really appreciate this product would be to know that sorghum flour is much more nutritious than typical flour used in pancakes, providing more #fiber #iron, #protein and other nutrients . This might be something I try in the future when I make my own pancakes from scratch, maybe just getting the flour I need from a bulk bin at a health food store, but I don’t intend to buy this product again.
