Arugula is such a nice base for a salad. I like how it adds a papery flavor. It's a much more interesting base than lettuce or even spinach! It went especially well with sweeter ingredients like pears and candied pecans. I absolutely loved this salad with fried Rebel Cheese chevre. I like that arugula lasts a bit longer in the fridge as well!
