Roasted eggplant, zucchini, and bell pepper, with dollops of creamy, sweet, and savoury (tomato-based?) sauce, garnished with pine nuts, and alfalfa sprouts. 🍆🥒🫑 Enjoyed how beautifully colourful as well as refreshingly juicy and tangy this was! Silky smooth texture without being cloyingly greasy since extra virgin olive oil was used.
