This was Stanley's entry for the Vegan Chef Challenge. It features a nice big portobello mushroom cap with teriyaki sauce, pickled red onion, kimchi, tomato jam, and arugula on a herbed focaccia bun.

This was a juicy and messy sandwich! The mushroom was dripping teriyaki juice and the kimchi contributed as well I think! The flavors were nice. The kimchi brought some nice spice to counter the sweet teriyaki. I do wish there was more than just one mushroom cap. It felt like a very light sandwich.
