I bought this can of E. D. Smith Pure Pumpkin a while ago with the intent of using it in a cake mix. This Canada Day long weekend, I decided to use it in a butter pecan cake as a substitute for both the suggested eggs and oil.

It’s been years since I’ve used pure pumpkin / pumpkin purée in a cake mix; the last time was probably in my pre-vegan days (more than 7 years ago).

The cake turned out very well. I deliberately didn’t bake it long enough so that it would be wet inside, just experimenting to have a different outcome. To be honest, I really don’t know if I used the appropriate amount of pure pumpkin. The cake’s taste was certainly not pumpkin-y. I think I’ll do this again.

According to the Nutritional Facts table on the side of the can, I might have to start using this pure pumpkin more often. It’s low in calories, fat-free, sodium-free, low in sugar, extremely high in vitamin A, decent amounts of iron and fibre and there’s just one ingredient. Why would anyone use oil and eggs? 

I will definitely be getting this again. I can’t remember how much I paid, but it wasn’t on sale so it was more than I would have wanted to pay.
