This is a wonderful, flavorful cheese! It has a strong smoked flavor that goes so well with the pungency of the Gouda flavor. The texture is great too. It has that powderiness that I associate with hard cheeses, which I enjoy. I also like the addition of a darker rind around the edges of the slices. This is great with some The Herbivorous Butcher meat such as pastrami on a cold sandwich. I also tried making a panini with the same ingredients. I don't think I give the cheese enough time to really melt, so I can't speak on its melting capabilities. Maybe I didn't take it low and slow enough. This was also a very nice addition to a charcuterie board! Cutting it up into triangles made it perfect for crackers!
I find it really cool that one slide has 20% of your daily recommended value of B12!
