I remember really enjoying JUST Egg's non-egg products like their ranch and mayo years ago. I was sad to see them get pulled, but it allowed for the company to focus on and perfect their main products. Now that it seems JUST Egg has found their footing, I'm happy that they reintroduced some of their old products!
We found this chipotle mayo at Whole Foods and knew it could be a great ingredient for so many dishes. The first thing we tried it on was an eggy tofu breakfast sandwich. @jonok marinated the slabs of tofu in turmeric, nooch, black salt, and other seasonings to have it soak up the eggy flavor. we added The Herbivorous Butcher hickory bacon, tomatoes, and this chipotle mayo on Dave's Killer Bread. The mayo was surprisingly spicy. It packs a ton of flavor! The heat built up, but never really got too hot. I felt like it was really perfect.
