I love that so many Betty Crocker mixes are vegan! They certainly aren’t healthy, but they’re great for making an easy and quick dessert! This was half off so I thought I’d give it a try. Instead of adding the 3 eggs as it says on the back I added three “vegan eggs” (Bob’s Red Mill egg replacer). It was realllyyyy good, so moist and soft. I added walnuts and a butter and sugar topping that melted into the cake in certain parts to make some gooey sugary parts and it was so yum. No carrots in sight, and it almost just tasted like a spiced cake.
