Honee Almond Brittle Ice Cream Sandwiches

Kate's Ice Cream

These consisted of caramelized almond brittle chunks in rich almond flavored ice cream made using organic coconut milk with a hint of 🐝-free honey made from apples 🍎 inside two house-made chocolate chip cookies.  It was decadently delicious.
