Rojo's is a #fullyveganrestaurant in #seattle that serves up a variety of #mexicanfood including tacos, tortas, quesadillas and more.
They have four choices of protein when we stopped in on a Friday night about an hour from closing. Asada, chicken, al pastor and carnitas. The asada was all out, we were tolf that asada is the fastest to sell out usually. I got a #taco plate with three different proteins. You can make it a meal by adding beans and rice. They have delicious homemade salsas as well.
This one has #tacosalpastor, the texture most reminded me of chicken, clearly a lot of thought and preparation has gone into this protein with lots of flavor and a great texture. Spicing and marinading al pastor takes time and thought and you can taste all the individual spices and adobo used for it. As a mexican who lived in Mexico and ate a lot of tacos vegan and not, this was a hit. It was very similar in flavor to what I remember al pastor being. The taco was served with diced white raw onion and cilantro.
We were served on #compostable plates with compostable cutlery and the drink cup was #recyclable, so there was thought put into the #sustainability factor.
They celebrated their one year anniversary yesterday so be sure to stop by and help them celebrate many more to come!
