Delicious! Rich and creamy with tons of spice! With eggplant, soy protein cubes, crispy basil, peanuts, and roasted chili peppers 🌶️

The curry had lemongrass which had a really nice texture that really complemented the soy cubes which were crumbly and even a little grainy. So good!
