This was so hearty and satisfying!! It consists of coconut brown rice, curry, some kimchi, and zucchini! The coconut flavor came through in a way that wasn’t overpowering the dish, but just right. I wished the curry had a bit more ingredients, but it was so creamy, and complemented the rice so well!
